Season the outside with salt, pepper, and your favorite spices. Then roast in a hot oven until it hits your preferred internal temperature. Let rest for half an hour then slice thinly.
Round roast comes from the rear part of the cow, so it’s lean but never tough. If you’re planning a pot roast with round roast, be sure to add extra fat to ensure the meat doesn’t dry out while cooking. Use beef tallow during the cooking process to add fat here, and you’ll get mouth-watering results.
