Quick and Easy Weekday Stir Fry Recipe for Busy Families

Meal times can often be a rush and a bit chaotic, especially if you've had a busy day and suddenly realize you have nothing ready for dinner. The kids are hungry, you're a little hangry yourself, and boxed meals are not an option due to family allergies. What to make in a hurry? How about a Weekday Stir Fry?
Ingredients:
- 2 pounds Stew Meat (for steak alternative recipe click here)
- 1 cup diced sweet pepper
- 1 cup sliced carrots
- 2 cups broccoli florets
- Soy sauce or Worcestershire sauce to taste
- 4-6 cups cooked rice

This quick family dinner can be customized to fit your family’s tastes and dietary needs. You can double the recipe or adjust the ingredient amounts to meet your family's preferences. For really big meals, you can even take it to the grill if your grill has a griddle.
For those with soy or corn allergies, try using Bragg's Coconut Aminos instead of traditional soy sauce. Always check the Worcestershire sauce label, as some brands contain corn while others do not.
When it comes to rice, I prefer using Brown Basmatti rice. For a low-carb diet, substitute cauliflower rice or omit the rice altogether. My kids prefer standard rice, so I often prepare it for them and skip adding much to my plate.
Cooking rice is straightforward with a rice maker, but it can also be done in an instant pot or on the stove. Instant rice works too if you’re in a hurry.
Feel free to substitute other vegetables if your kids have particular dislikes. Great alternatives include peas, onions, mushrooms, and chives. You can use fresh or frozen vegetables. The canned vegetables tend to get really mushy in stir fry for my families taste, but if that’s what you have feel free use it.
To add some variety, consider seasoning with ginger, turmeric, or sesame seeds.
Cooking Directions
- Cook the rice according to the package directions.
- Cook the stew meat to your desired doneness. (For younger children, cut the bites smaller, kitchen scissors work really well here.)
- Cook the vegetables in a skillet until tender.
- Season the food with soy sauce and other desired seasonings.
- Serve hot over rice.
