Weekday Stir Fry

Meal times can be such a rush, frenzy, irritating time. You stayed out
too long enjoying the day, kids are whinnying, you have nothing ready
for dinner, and are a little hangry yourself. Boxed meals are a no go
for your family too because of allergies. What to make in a hurry?! How about Weekday Stir Fry?
What you will need:
- 2 pounds Sirloin Steak
- 1 C diced sweet pepper
- 1 c sliced carrots
- 2 c broccoli
- Soy sauce or Worcestershire to taste
- 4-6 c Cooked Rice
This recipe can be doubled or adjust any of the ingredient amounts to meet your families desires. For really big meals you can even take it to the grill if your grill has a griddle.
For the soy sauce, I like to use Bragg's Coconut Aminos instead. This is an easy get around for soy or corn allergies. Check the Worcestershire label for ingredients some are free of corn some are not.
For the rice, I like to use Brown Basmatti rice. For a low carbohydrate diet use cauliflower rice, or omit all together. The kids prefer normal rice at my house, so often times, I will make the rice for them and just not add any to my plate.
I cook the rice in a rice maker, but can be done in a insta-pot, or on the stove. You can even use instant rice.
You can also substitute other vegetables if your kids don't like one listed. Other good options are peas, onions, mushrooms, and chives.
Other seasonings you can add to change up the flavor a bit include ginger, turmeric, and sesame seed.
Directions:
- Cook rice per package directions.
- Cook vegetables in ski let until tender
- Cut sirloin into bite size pieces and cook to desired doneness (smaller the children, the smaller the bites will need to be cut)
- Return vegetables to skillet and season with soy sauce
- Serve meat and vegetable mix hot over rice.
