Easy Beef Stroganoff

The cooler weather is setting in, and you’re craving that delicious, creamy beef stroganoff (you are now if you weren’t). But who has time to whip that up when everyone is hungry now and you don’t have the sirloin steak? Try this easy beef stroganoff recipe, bonus you can put it in the crock pot for later too!

What you’ll need:

  • 2 pounds of stew meat (you can buy that here)
  • 2-4 cloves garlic minced
  • ½ t salt
  • ½ t pepper
  • ½ pound mushrooms, sliced
  • ½-1T flour
  • 2 c milk
  • Noodles Cooked

The garlic feel free to add more. After all you measure garlic with your heart. A half pound of mushrooms is ½ a container. You could also use one small can of canned mushrooms.

I use gluten free flour. You are using enough to absorb the drippings. For the milk you can for sure use a milk alternative for allergies. Oat or almond milk works best here as far as flavor goes.

My family uses vegetable noodles from Cybele’s Free to Eat as our favorite. We are a gluten free household and this way there are some vegetables snuck in for a full meal. Note these do not reheat well as with most gluten free noodles. Only cook what you’ll need for that meal then cook more when you eat the leftovers.

Directions:

  1. 1.  Brown the meat with garlic. Then season with salt and pepper to taste. Add the mushrooms.
  2. 2. Toss flour into the skillet and stir until all drippings are absorbed.
  3. 3. Add milk and whisk until smooth. Simmer until thickened as desired.
  4. 4. Serve over cooked noodles and enjoy!

Notes of the crock pot:

In step #1, instead of browning in a skillet, simply add all the ingredients to the crock pot. Set the crockpot to low and cook for 6-8 hours, 4 hours for high.

You will have extra juice in the crock pot compared to a skillet. Just before serving, pull a little of the juice out and place into a bowl. Whisk the flour in a small bowl until smooth. As you’re whisking in the crockpot, slowly pour the flour mixture back into the crockpot. Then add the milk and whisk again to mix.
