Easy Beef Pot Roast

Nothing beats coming home to a meal ready in the crock pot. Even better is when it is quickly prepared. The bonus is you can also use it for meals later in the week as well. Introducing everyday beef pot roast. This is a very mild tasting roast that is easy to mix with most meals.
What you’ll need
- 3-4 pound beef roast* you can buy that here
- ¼ c coffee (yes just save a little from the coffee pot)
- ½ t onion powder
- ½ t basil
- ½ t oregano
- ¼ t rosemary
For the complete meal add on options, serve with salad, corn potatoes or carrots. For a complete meal in the crock pot, add the carrots and/or potatoes into the crockpot the last 1-2 hours.
*Recommendations.
Any roast will work, chuck, tip, sirloin, arm, rump. This recipe works well with any roast. The exception might be a prime rib roast or strip steak roast. Those are very tender to begin with and don’t necessarily need the low and slow cooking this recipe calls for.
I usually put the roast into the slow cooker right from the freezer. If I want the roast for Sunday noon, I’ll put it in the crock pot the night before and then add the carrots and potatoes just before leaving for church. Lunch is done when we walk back in the door.
Directions:
- 1. Place roast in the slow cooker
- 2. Pour coffee over roast.
- 3. Sprinkle spices over roast
- 4. Cook on low for 8-10 hours.
- 5. Just before eating shed or slice the meat. It will be fall apart tender.
- 6. Serve hot.
You serve the roast as the main dish with mashed potatoes, or rice or noodles. You can also use it as sandwich meat and serve it on buns. Or the all in one crock pot meal as roast, carrots, and potatoes.
