Beef Short Ribs

You've got a big day scheduled away from home and know everyone will be hangry by the time you get home. The last thing you want to do is cook supper with a mob of hangry people hanging around the kitchen asking how long till supper over and over.
Here's a quick and easy beef short rib recipe you can prep before you leave for your day and have supper ready when you get home. No more super negotiations with hangry kids while cooking!
What You'll need:
• 2 pounds beef ribs (You can buy those here)
• 1/4 t salt
• 1/4 t pepper
• 4 c broth
• 1/4 c coconut aminos*
• 2T tomato paste
• 1 t minced garlic
• 1 t rosemary
For allergies to coconut, substituting Braggs soy aminos or Worcestershire sauce works just fine. This is the acid in the recipe to help break the tough fibers down.
For the broth, I like to use bone broth for an added nutrient boost, but any beef or vegetable broth will do.
Directions
1. Mix Beef broth, aminos, tomato paste, garlic into slow cooker.
2. Place ribs into the slow cooker and add rosemary
3. Cover and cook on Low for 4-6 hours until beef pulls off the bone easily.
If you don't plan ahead, like me, and thaw the beef no worries, place in slow cooker frozen and adjust cooking time to 8-10 hours. It will turn out just as tender and delicious.
There will be plenty of broth in the pot when the ribs are done. I like to use some of this and make a quick gravy to go over mashed potatoes or another recipe later in the week.
For complete meal ideas add a simple lettuce salad, potatoes (mashed is my family’s favorite), or green beans.
