Beef Ranch Noodles

Meal times can be such a rush, frenzy, irritating time. You stayed out too long enjoying the day, kids are whinnying, you have nothing ready for dinner, and are a little hangry yourself. Boxed meals are a no go for your family too. What to make in a hurry?! How about Beef Ranch Noodles? This is a new twist on my Grandma's classic goulash recipe.
What you need:
- 1 pound Ground Beef
- 4 cup peas
- 1/2-1 cup ranch dressing
- 2 cups cooked noodles
Carrots are an easy swap for peas, if you are wanting to change it up, or your kids are on a pea strike. Frozen vegetables work best, but you can also use fresh or canned as well. When using canned, make sure to drain the liquid.
For dairy allergies, you can use dairy free ranch.
Gluten allergy? Use gluten free noodles, or our favorite are veggie noodles from Cybele's Free to Eat. One advantage for veggie noodles is they are lower on the glycemic index if you are wanting to help balance blood sugar.
Your family needs more protein in a meal? Mine too! I usually do 2 pounds of ground beef for my family of 5 (2 adults, 3 kids). Yes, we do eat a lot of protein.
Directions:
- Cook noodles per package directions
- Brown ground beef until no longer pink
- Add peas to skillet and cook until desired doness. My kids don't like the vegetables mushy, so I cook them to just warmed up from the frozen state.
- Add beef mixture and ranch dressing to drained noodles and mix. The amount of ranch dressing you will use will depend on your families taste.
- Serve warm.
